
I can’t take credit for this recipe, but I can vouch for its results.
Combine by hand or with a mixer.
1 box of cake mix
1 can of pumpkin purée ( not pumpkin pie filling)
Batter will be thick
Fill muffin cups 3/4 of the way full. Bake at 350 for 18-20 minutes for full size muffins. If you use a mini muffin pan, check after 10 minutes. For a loaf pan of pumpkin bread allow 40 minutes.
When your toothpick comes out clean- you’re done
