Yay! The Asparagus is ready in our neck of the woods. Here are two of our favorite simple suppers. Each needs a few minutes of prep and cooks for about 20 minutes and serves 4- which means leftovers in our house.

Super easy… we make with shredded Swiss and Gruyère cheese from Trader Joe’s and Pillsbury Puff Pastry Sheets and Grain mustard of your choice. Just trim your Asparagus to length.

Another Easy one to whip up- we add Spinach instead of Parsley and use Swiss/ Gruyère instead of Parmesan and serve in a cast iron skillet. Cut your asparagus into bite size pieces on an angle for this one.
